Power balls, blueberry bites, chocolate quinoa balls

Have you tried these things called power balls or energy bites? They are wonderful for a snack and easy to make.

Power balls
2 C old-fashioned rolled oats
1 C extra-crunchy peanut butter
1/2 C raw honey
1/2 C mini chocolate chips
1/2 C dried cranberries
1/2 C sunflower seeds
2 tbsp. flax seed

Power balls
2 C old-fashioned rolled oats
1 C extra-crunchy peanut butter
1/2 C raw honey
1/2 C mini chocolate chips
1/2 C dried cranberries
1/2 C sunflower seeds
2 tbsp. flax seed
In a food processor, pulse oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes.
Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on baking sheet. Refrigerate for 30 minutes before serving. These can be stored in refrigerator for several days.

Blueberry bites
8 oz. dried blueberries
2-3 drops lemon essential oil
1 C old-fashioned oats
1/4 C slivered almonds
1/4 C flax seed
2 tsp. honey
In a food processor or blender, combine all ingredients and blend to create a paste. Paste should be able to be rolled into tablespoon-size balls. If it is not forming a thick enough paste, add more honey. Chill in refrigerator for several hours before eating.

Chocolate quinoa balls
1/2 C peanut butter
2 tbsp. pure maple syrup
1 tsp. vanilla extract
1 dash salt
1 C cooked quinoa, slightly warm (not hot)
2 tbsp. mini chocolate chips
Line a half baking sheet or plate with parchment paper; set aside. In a bowl, add peanut butter, maple syrup, vanilla extract and salt. Mix until thoroughly combined. Stir in quinoa and mix until well combined. Fold in chocolate chips.
Take a heaping tablespoon size of dough and roll into a ball. Place on parchment paper. Do the same until no dough remains. Place in refrigerator or freezer to chill for about 30 minutes. Store in an airtight container in the freezer or refrigerator.
